Egg White Bites

🥕 Ingrédients

  • Egg Whites: Low in calories and high in protein, egg whites form the base of our bites.
  • Cheddar Cheese: Provides a savoury kick and gooey texture to each bite.
  • Peppers, Onion, Spinach:These colourful veggies add flavour, nutrients, and a delightful crunch.
  • Salt and Pepper: Essential seasonings to enhance the overall taste of your bites.

👨‍🍳 Instructions

  1. Preheat the oven to 350 degrees and spray amuffin panwith cooking spray.
  2. Blend the egg whites, cottage cheese and shredded cheese until smooth.
  3. Heat the avocado oil in apanon medium-high and add the spinach. Sautee for 2-3 minutes until the spinach is wilted.
  4. Add some of the red pepper and spinach to each muffin cup, then pour the egg white mixture filling each cup 3/4 of the way full.
  5. Boil some water and fill abaking dishwith the boiling water.  Place it on the bottom rack of the oven. (This step is optional, but will create a “sous-vide” effect to steam the egg bites.)
  6. Place the muffin tin on the top rack of the oven and bake for 30-35 minutes until golden brown on the edges.
  7. Let cool then use a knife to separate the egg bites from the edges and remove from thepan.
