Protein Banana Muffins
🥕 Ingrédients
- Flour: You can use all-purpose flour, a 1-1gluten-free flouror oat flour for this recipe.
- Coconut sugar: I love coconut sugar for its light caramel-like flavour. Brown sugar, honey or maple syrup make great substitutions.
👨🍳 Instructions
- Preheat the oven to 350°F (180°C) and line amuffin panwith paper liners or lightly grease it.
- In a large bowl, mash the bananas until smooth.
- Whiskin the eggs, avocado oil (or melted butter), Greek yogurt,coconut sugar, andvanilla extractuntil well combined.
- Add the flour, protein powder, baking soda, salt, and cinnamon to the bowl. Gently mix until just combined. Do not overmix.
- Gently fold in the chocolate chips.
- Divide the batter evenly among the muffin cups, filling each about three-quarters full.
- Bake for 18–22 minutes, or until a toothpick inserted in the centre comes out clean.
- Let the muffins cool in thepanfor 5 minutes, then transfer to a wire rack to cool completely.
