🥕 Ingrédients

  • Flour: You can use all-purpose flour, a 1-1gluten-free flouror oat flour for this recipe.
  • Coconut sugar: I love coconut sugar for its light caramel-like flavour. Brown sugar, honey or maple syrup make great substitutions.

👨‍🍳 Instructions

  1. Preheat the oven to 350°F (180°C) and line amuffin panwith paper liners or lightly grease it.
  2. In a large bowl, mash the bananas until smooth.
  3. Whiskin the eggs, avocado oil (or melted butter), Greek yogurt,coconut sugar, andvanilla extractuntil well combined.
  4. Add the flour, protein powder, baking soda, salt, and cinnamon to the bowl. Gently mix until just combined. Do not overmix.
  5. Gently fold in the chocolate chips.
  6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  7. Bake for 18–22 minutes, or until a toothpick inserted in the centre comes out clean.
  8. Let the muffins cool in thepanfor 5 minutes, then transfer to a wire rack to cool completely.
