Apple Pie Oatmeal

- Oats: For this recipe, you can either use quick oats or rolled oats, either will work!

- To make the cinnamon apple topping, heat thecoconut oilin a small skillet over medium-high heat.
- Add the cubed apple,maple syrup, and cinnamon. Stir and cook for 2 minutes, then reduce heat to medium-low, cover, and cook for 8–10 minutes until tender. Remove from heat and set aside.
- To make the oatmeal, in a small pot, add the chopped apple, almond milk, water, andmaple syrup.
- Bring to a gentle boil over medium-high heat and cook for 4–5 minutes until the apples begin to soften.
- Stir in the oats, cinnamon, nutmeg, and salt. Reduce heat to medium and cook for another 3–5 minutes, stirring occasionally, until the oatmeal reaches your desired consistency.
- Spoon into bowls, top with the cinnamon apple mixture, and enjoy warm.
