  1. If using rolled oats, blend them in ablenderorfood processoruntil finely ground. (Skip this step if using pre-made oat flour.)
  2. In a large mixing bowl,whiskthe eggs. Add the cottage cheese, milk andvanilla extract, and mix until smooth.
  3. Add the oat flour, baking powder and baking soda. Gently fold everything together until just combined.If the batter is too thick, stir in another 1-2 tablespoons of milk to loosen it slightly. (It should be thick but scoopable.)
  4. Heat a lightly greased non-stick skillet over medium heat. Scoop about ¼ cup of batter per pancake into thepan. Cook for 2–3 minutes until bubbles form and the edges look set, then flip and cook another 2-3 minutes until golden brown.
  5. Serve warm with your favourite toppings likemaple syrup, fresh fruit, or nut butter
