Healthy Pumpkin Muffins

- Preheat the oven to 350°F (180°C) and line amuffin panwith paper liners.
- In a medium bowl,whisktogether the oat flour, baking powder, baking soda, salt, andpumpkin pie spice.
- In a separate large bowl,whisktogether the eggs,maple syrup, avocado oil, milk, pumpkin purée, andvanilla extractuntil smooth.
- Pour the dry ingredients into the wet ingredients and use a spatula to gently fold everything together until just combined.
- Stir in the chocolate chips. Be careful not to overmix.
- Divide the batter evenly between the muffin cups, filling each about 3/4 full. Sprinkle a few extra chocolate chips on top if desired.
- Bake for 18–22 minutes, or until a toothpick inserted in the centre comes out clean.
- Let the muffins cool in thepanfor 5–10 minutes, then transfer to a wire rack to cool completely before serving.
